Emerald Maldives Resort & Spa further raise the standards of the stay experience and launches ‘underwater wine project’ with the introduction of a new underwater cellar.
After being elected as the #1 Deluxe All Inclusive resort in Asia at the TripAdvisor’s Traveller’s Choice Awards 2022, the Italian group The Emerald Collection confirms its pioneer in proposing a gastronomic offer of choice in the Indian Ocean and further raises the standards of the stay experience of staying at Emerald Maldives Resort & Spa with the introduction of a new underwater cellar located off the private island on which the structure stands.

Positioned so as not to hinder the natural development of the coral reef, the underwater cell promises exceptional bottle aging for the Emerald Rosso Riserva 2019 wine, a 100% Sangiovese from the Tuscan hills.

The underwater preservation technique consists of placing the bottles of wine at a depth of 30 meters below sea level for a minimum duration of six months, ensuring ideal conditions for the rest of the wine thanks to the minimal impact of the sun’s rays, constant temperature, pressure change and the gentle movement of ocean currents.

Characteristics that bring a plus in aging give the wines unique characteristics: silkier and more refined tannins on the nose and palate, accentuated floral notes, a greater sense of freshness, and hints of red fruits such as strawberry and raspberry highlighted.

“The underwater aging of our wines limits the environmental impact compared to purely terrestrial winemaking, limits CO2 emissions, reduces the use of energy resources, and, above all, ensures that the wine rests and ages optimally giving an excellent final result” explains Nash Kanyangarara, Head Sommelier of Emerald Maldives Resort & Spa.

The 378 bottles set aside in the underwater cell enrich the wine list of Emerald Maldives Resort & Spa alongside – at an extra cost – the wide selection of fine labels from all over the world included free of charge in the Deluxe All-Inclusive stay formula proposed by the brand.

Guests of Emerald Maldives Resort & Spa can also experience the Le Nez du Vin experience, which includes an evocative Pieds-dans-l’eau wine tasting in front of the resort’s main beach, or in the privacy of their villa, guided by the Head Sommelier to discover 3 of the finest wines available in the Deluxe-All Inclusive menu.
