Four months after its opening, Lefay Resort & SPA Dolomiti unveils “Grual”, the new Restaurant that celebrates the mountains, in particular the peak that forms the backdrop to the Resort

Inspired by an enchanted wood, Grual recalls Alpine nature: leaves of shiny metal cover the ceiling, while trees carved into the Italian wood are the framework to a room with a fairy tale atmosphere. The ambience suggests cuisine that pays homage to Trentino Alto-Adige and its excellent local products. The menu has been created according to an “altimetric” logic; the main ingredients of the region, all organic and sustainably produced, are accompanied by information on their origins and the altitudes that their habitats are found at: valley bottom, Alpine pasture and high mountain.

An itinerary exploring the surrounding landscape is presented to the guest through two 8- or 12-course tasting menus and an à la carte menu full of delicious fare, also presented with the same altimetric logic. This sensory experience is completed by offerings “from the trolley”: the finest cheeses from Trentino-Alto Adige and the “Tisane del Bosco”, prepared with fresh herbs at the table on the spot.

The suggested wine pairing focusses on prestigious local productions and is completed by a wider list, enriched with important bottles from famous international wineries.

The dishes were created by the Group’s Executive Chef Matteo Maenza in collaboration with the Chef de Cuisine Martino Longo. Every recipe is prepared from carefully selected products with well-researched production cycles. From 12 December, “Grual” will also be open to non-residents of the Resort.
